Instructions

  1. Prepare Your Filling: In a mixing bowl, combine the shredded chicken with the enchilada dip, shredded cheese, and chopped green onions. Stir until everything is evenly coated and ready to fill your tortillas.
  2. Assemble the Roll-Ups: Lay a tortilla flat and spoon a generous amount of the chicken mixture onto one side. Spread it evenly but avoid overfilling. Roll the tortilla tightly, making sure the filling stays inside as you roll.
  3. Bake or Pan-Cook: Place the roll-ups seam side down on a baking sheet lined with parchment paper or lightly greased. Bake at 375°F (190°C) for 15-20 minutes until the tortillas are slightly golden and the cheese inside is melted. Alternatively, cook them in a lightly oiled skillet over medium heat for about 3-4 minutes per side until crispy.
  4. Cool Slightly and Serve: Remove from heat and let the roll-ups rest for a couple of minutes to firm up. This helps them hold together when sliced or served whole. Serve with your favorite dipping sauce or toppings.
