Ingredients

Scale

Potatoes

  • 4 cups Yukon Gold or red potatoes, thinly sliced

Protein

  • 2 cups cooked chicken breasts, shredded or cubed
  • 8 strips bacon, cooked crispy and drained

Sauce

  • 1 cup ranch dressing or 1 packet ranch seasoning mix
  • 1/2 cup sour cream
  • 1/4 cup cream cheese or mayonnaise
  • 1 tsp garlic powder
  • Salt and pepper, to taste

Cheese

  • 1 1/2 cups shredded cheddar cheese or cheese blend

Garnishes

  • 2 green onions or chives, chopped

Instructions

  1. Prepare the potatoes: Wash and slice the potatoes into thin, even rounds to ensure uniform cooking. Boil or microwave them briefly until just tender but not fully cooked to avoid a mushy texture in the bake.
  2. Cook the chicken and bacon: Cook bacon strips until crispy, then drain on paper towels. Cook chicken breasts by baking, boiling, or pan-searing until fully cooked. Shred or dice the chicken into bite-sized pieces.
  3. Make the creamy ranch sauce: In a bowl, combine ranch dressing or ranch seasoning mix with sour cream and cream cheese or mayonnaise. Add garlic powder, salt, and pepper to taste, stirring until well blended and creamy.
  4. Layer the bake: Grease a baking dish, then layer half of the sliced potatoes on the bottom. Add half of the chicken and bacon on top. Spoon half of the ranch sauce evenly over the layers, then sprinkle half of the shredded cheese. Repeat the layers, finishing with a generous cheese topping.
  5. Bake until bubbly: Preheat oven to 375°F (190°C). Bake the dish for 30-40 minutes until potatoes are tender and cheese is golden and bubbly. For best results, cover with foil for the first 20 minutes to retain moisture, then uncover to brown the cheese.

Notes

  • Keep potato slices uniform to ensure even cooking.
  • Partially cook potatoes before baking to prevent sogginess.
  • Use freshly cooked chicken for the best texture; pre-cooked rotisserie chicken works well.
  • Drain bacon thoroughly on paper towels to avoid excess grease.
  • Cover the dish during the first 20 minutes of baking and uncover to brown the cheese for a crispy topping.
