Instructions

  1. Prep the Vegetables: Wash and peel the carrots and potatoes. Cut them into evenly sized chunks for even roasting. Peel and quarter the onion. Separate the garlic cloves from the bulb, leaving the skin on to roast inside.
  2. Toss with Olive Oil and Seasonings: In a large bowl, combine all the cut vegetables and whole garlic cloves. Drizzle with olive oil, then sprinkle with salt, pepper, and fresh herbs. Toss gently using your hands or a spoon until everything is well coated.
