Instructions

  3. Add Sausage and Spices: If using smoked sausage or Andouille, slice and add it now. Cook for a few minutes until the sausage releases flavor and browns lightly. Sprinkle in your Cajun seasoning, stirring well to coat everything evenly.
  4. Simmer the Potatoes: Add the diced potatoes and pour in the chicken broth. Bring the mixture to a boil, then reduce to a simmer and cook until the potatoes are tender, about 15–20 minutes.
  5. Blend and Finish: For a creamy texture, partially blend the soup with an immersion blender, leaving some chunks intact. Stir in the heavy cream and warm through without boiling to preserve the richness.
