Ingredients

Scale

Main Ingredients

  • 1/2 cup unsweetened cocoa powder
  • 1 cup all-purpose flour (or gluten-free flour blend for gluten-free option)
  • 1 cup sugar
  • 1/2 cup (1 stick) butter, melted
  • 2 large eggs (or flaxseed substitute for vegan)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Optional Variations

  • 1/2 cup chopped walnuts or pecans (nutty twist)
  • Raspberry jam (for berry burst)
  • Peanut butter (for swirl)
  • Pinch of cayenne or cinnamon (spicy chocolate)
  • Dairy-free butter (for vegan option)

Instructions

  1. Prepare the Batter: Melt the butter and mix it with sugar and cocoa powder until smooth and glossy. Add eggs and vanilla extract, beating until well combined. Sift in flour, baking powder, and salt, then mix delicately until just incorporated—do not overwork the batter.
  2. Bake the Brownie Sheet: Pour the batter evenly into a parchment-lined baking sheet, smoothing the top carefully. Bake in a preheated oven at 350°F (175°C) for about 15 minutes, or until the surface looks set but still moist.
  3. Roll While Warm: Immediately invert the baked brownie sheet onto a clean kitchen towel lightly dusted with powdered sugar. Peel off the parchment paper, then roll the brownie tightly with the towel from one short edge to form a roll. Let cool completely in this shape.
  4. Unroll and Add Filling (Optional): Once cooled, gently unroll the brownie and spread your choice of filling such as cream cheese frosting, chocolate ganache, or fruit jam. Roll it back up carefully without the towel, sealing in the filling.
  5. Slice and Serve: Use a sharp knife to cut the brownie roll into even slices. Serve immediately or refrigerate to let flavors meld together.

Notes

  • Use room temperature eggs for better batter incorporation and even baking.
  • Do not overbake; remove the brownie sheet when the center is slightly undercooked to maintain fudginess.
  • Roll the brownie while warm and pliable to avoid cracks or breaks.
  • Chill the rolled brownie before slicing to help it hold its shape.
  • Use high-quality cocoa powder and butter for the richest flavor.
