  • 4 large fresh eggs
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 medium bell pepper, chopped
  • 1/2 cup shredded cheese (Monterey Jack, Pepper Jack, or Cheddar recommended)
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat and Prep: Preheat your oven to 375°F (190°C). Chop the onion, garlic, and bell pepper so they’re ready when you start cooking.
  2. Cook the Chorizo Mixture: In an oven-safe skillet or baking dish, heat olive oil over medium heat. Add chopped onion and bell pepper, sauté until softened and fragrant. Stir in garlic and cook for 1 minute. Add Mexican chorizo, breaking it apart as it cooks until fully browned and slightly crispy.
  3. Add Eggs: Clear small spaces in the skillet for each egg or pour the eggs evenly over the chorizo mixture. Season with salt and pepper. The eggs will bake absorbing the spicy flavors beneath.
  4. Add Cheese and Bake: Sprinkle shredded cheese evenly over the top. Transfer skillet or dish to the oven and bake uncovered for 10-15 minutes, or until eggs are set but still tender and creamy.
  5. Garnish and Serve: Remove from oven and garnish with freshly chopped cilantro. Serve warm with tortillas or crusty bread.
