Instructions

  1. Prepare the Filling: In a mixing bowl, combine shredded chicken with cumin, chili powder, sautéed onions, minced garlic, shredded cheese, chopped cilantro, and lime juice. Mix well until all ingredients are evenly incorporated and the filling is moist but not too wet for rolling.
  2. Warm the Tortillas: Soften the tortillas by wrapping them in a damp towel and microwaving for 20-30 seconds or heating each on a dry skillet for a few seconds per side. This makes them pliable and prevents cracking when rolled.
  3. Assemble the Taquitos: Place about one heaping tablespoon of the filling onto each warmed tortilla, then roll them tightly from one end to the other. Position the seam side down to help keep them from unrolling during baking.
  4. Arrange on Baking Sheet: Line a baking sheet with parchment paper or foil. Place rolled taquitos seam-side down on the sheet. For extra crispiness, lightly brush or spray the tops with olive oil.
  5. Bake: Preheat the oven to 425°F (220°C). Bake the taquitos for 15-20 minutes, flipping halfway through, until they are golden brown and crispy on all sides. Watch carefully to avoid burning.
