Ingredients

Scale

Main Ingredients

  • 1 lb ground beef (80/20 for juiciness)
  • 6 slices bacon
  • 1 cup shredded sharp cheddar cheese
  • 1 cup breadcrumbs (or gluten-free breadcrumbs for gluten free version)
  • 2 large eggs
  • 1/2 cup finely diced onion
  • 1/4 cup ketchup, plus extra for glaze
  • 1 tablespoon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Prepare the Bacon: Cook the bacon in a skillet over medium heat until crispy but not overdone. Drain on paper towels and chop into bite-sized pieces to keep the bacon crunchy in the meatloaf.
  2. Mix the Meatloaf Ingredients: In a large bowl, combine ground beef, cooked bacon, diced onion, breadcrumbs, eggs, shredded cheddar cheese, ketchup, mustard, salt, and pepper. Mix gently with your hands or a spoon until ingredients are evenly distributed, being careful not to overmix.
  3. Shape and Bake: Form the mixture into a loaf shape and place it in a greased baking dish or loaf pan. Spread a thin layer of ketchup on top for a glaze. Bake in a preheated oven at 350°F (175°C) for about 60 minutes, or until the meatloaf reaches an internal temperature of 160°F (71°C).
  4. Rest and Serve: Let the meatloaf rest for 10 minutes after baking to allow the juices to redistribute, ensuring tender and juicy slices.

Notes

  • Use ground beef with about 20% fat for moist and flavorful meatloaf.
  • Mix gently to avoid tough texture.
  • Chop bacon after cooking to maintain crispiness.
  • Use a meat thermometer to check for doneness without drying out the loaf.
  • Adding cheese inside and on top enhances the gooey cheesy experience.
