Instructions

  1. Prepare the Chicken: Pat the chicken thighs dry and season generously with salt, ground black pepper, and paprika. Heat olive oil in a large skillet over medium-high heat. Sear the chicken thighs until golden brown on both sides, about 4-5 minutes per side. Remove from skillet and set aside.
  2. Sauté Aromatics: In the same skillet, add a bit more olive oil if needed. Sauté the finely chopped garlic and onion until fragrant and translucent, about 3 minutes, scraping up any browned bits left from the chicken to enhance the flavor.
  3. Cook the Rice: Add the long-grain rice to the skillet and stir to evenly coat it with the aromatic oil and onions. Pour in the chicken broth and stir once to distribute. Nestle the seared chicken thighs on top of the rice.
  4. Simmer Until Done: Cover the skillet tightly and reduce the heat to low. Let the chicken and rice cook together, absorbing the broth’s flavors, for 20-25 minutes or until the rice is tender and the chicken is fully cooked through.
  5. Finish and Garnish: Turn off the heat and allow the dish to sit covered for 5 minutes to steam. Gently fluff the rice with a fork, sprinkle freshly chopped parsley over the top, and serve warm.
